Ingredients
- 2 eggs
- 1 Tbsp heavy cream
- 12 oz water
- 1 c tightly packed spinach mine was frozen
- 2- 3 Tbsp SweetEs fusion sweet
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 Pinch of mineral salt
- 2 tsp Nutiva buttery coconut oil can use regular coconut oil plus butter extract
- 2 tsp vanilla ghee can use butter plus 1vanilla
- 1 scoop hydrolyzed collagen peptides
Instructions
- Place all ingredients except collagen, in high-speed blender on **"soup" mode.
- Let cycle run.
- Add collagen at end- blend just to combine
Notes
** If your blender is not equipped with soup mode, blend all items (except collagen) until smooth, then pour into saucepan over medium heat on stovetop, whisking continuously to keep egg from scrambling. Cook for 4-5 minutes, add collagen and whisk until mixed. Remove from heat, serve immediately

Elena Is this suppose to have raw eggs not cooked?
Yes, because it goes into a high speed blender that has soup mode, which runs for 8 minutes and cooks the egg.
Could I use okra instead of spinach in this recipe?
Spinach has a very mild flavor. Okra does not. That said, you can try it but only use 1/2 cup okra. You might need more extracts to mask it though.
