This is one of those meals I make in my Ninja 3 in 1 cooker. Love this pot! It sears, steams, bakes, and slow cooks. Simple, quick, easy. If you don’t have a cooker just do it in your skillet.
Ingredients
- 1 Tbsp coconut oil use refined if coconut taste bothers you
- 8 boneless skinless chicken thighs
- 1 tsp creole seasoning
- 1/2 tsp mineral salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp dried basil
- 1 tsp rubbed sage
- 1 tsp dried thyme
- 12 oz tomato sauce 1 1/2 cups
- 1 small onion (chopped)
Instructions
- Heat ninja pot on high setting, or skillet on stove under high heat
- Add coconut oil...allowing oil to heat (1-2 minutes)
- While pot is heating, season thighs with all seasonings, rubbing each piece well to coat completely
- Add chicken to hot pot. Turn heat to low setting on pot, (or med low on your stove), cooking about 10 minutes each side.
- Add chopped onions and tomato sauce to pot, stir, then cover and allow to simmer for 20 minutes (turn stovetop to low while simmering )

One small or 1/2 of a large.
Decided to use a whole small onion, finely diced, it worked wonderfully. When it was done I took the chicken out of the broth and placed it in my mixer and shredded the meat in seconds. Chicken Taco salad for me. Wonderful F meal. Thank you so much for your hard work on these recipes.
