I brine thicker cuts of meats to impart flavor throughout. If you’ve never brined, give it a shot!
Ingredients
- 4 lbs chicken drumsticks
Brine
- 3 Tbsp salt
- 1/4 cup distill med white vinegar
- 1 gallon water
Rub
- 2 tsp mineral salt
- 1 tsp onion powder
- 1 tsp granulated garlic powder
- 1 tsp Italian seasonings
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1 tsp basil
- 1/2 tsp sage
- 3 Tbsp parm cheese green can
Instructions
- Place chicken legs and brine ingredients in bowl deep enough to cover all pieces. Let sit for 30 minutes
- Make rub from all dry ingredients. Rub on legs massaging into pieces well.
- Line baking dish or cookie sheet with foil, then spray foil with cooking spray
- Place drums in single layer in dish, bake 60 minutes....turning over at halfway point.
