Golden delicious and healthy. Yummy cupcakes infused with superfoods!
Ingredients
- 1 cup coconut flour
- 1 3/4 cups SweetEs fusion sweet
- 1 Tbsp aluminum free baking powder
- 1/3 tsp mineral salt
- 1 tsp turmeric powder
- 1/2 tsp black pepper
- 6 eggs room temperature
- 1/4 cup room temperature butter
- 1/4 cup coconut oil melted
- 1 14 oz can coconut milk
- 2 tsp vanilla extract
- 1/2 tsp almond extract
- 1 recipe SweetEs Almond Cream Glaze
Instructions
- Preheat oven to 350
- Sift all dry ingredients together in mixing bowl- set aside
- In separate bowl add all other ingredients- mix on high until combined (about 1 minute)
- Add dry ingredients to wet, mix on low until just combined, scrape down sides of bowl, and finish mixing by hand until everything is incorporated
- Let mixture sit for 10 minutes.
- Scoop batter into paper lined mini muffin tins and bake 20 minutes.
- Alternately scrape into sprayed bundt cake pan and bake for 40 minutes- check for doneness by inserting a knife in center.
- Top with SweetEs Almond Cream Glaze.
