I was asked to make Amish Friendship bread, a recipe I’d never heard of, let alone tasted. I looked at the recipe that was sent as inspiration and did my best to mimic what “I think it tastes like” while making something that is plan compliant. So how’d I do?
Ingredients
Bread
- 1 cup almond flour
- 1/2 cup coconut flour
- 1 Tbsp aluminum free baking powder
- 1/4 tsp baking soda
- 1 tsp xanthan gum
- 1/2 tsp mineral salt
- 1 1/4 cup SweetEs fusion sweet
- 2 Tbsp cinnamon
- 1 Tbsp gelatin not collagen
- 2 Tbsp water
- 1 tsp glucomannan
- 4 eggs
- 2 Tbsp vanilla extract
- 3/4 cup Nutiva buttery coconut oil
- 2 Tbsp butter
- 1/2 cup unsweetened almond milk
- 1/4 cup heavy cream
Cinnamon Sugar
- 3 Tbsp SweetEs fusion sweet
- 1 tsp cinnamon
Instructions
- Mix Cinnamon Sugar ingredients together until combined. Set aside.
- Make bread by sifting first 8 (dry) ingredients into mixing bowl.
- Dissolve gelatin in water then add to separate bowl along with balance of ingredients “except” milk & cream.
- Mix with hand mixer for 30-45 seconds, then add dry ingredients and continue mixing, by hand.
- Add milk and cream, mix into batter. Let sit 15 minutes. Do not skip this step.
- Line 2 loaf pans with parchment paper, scrape 1/2 of batter/dough into each one. Sprinkle each with 1/2 the Cinnamon Sugar
- Bake at 325 for 60-70 minutes until knife comes out clean.
