I’m obsessed with daikon radishes! I had them pickled at a restaurant last month and decided to make my own version. Hope y’all like them!
Ingredients
Brine
- 1/2 cup apple cider vinegar
- 1/2 cup rice wine vinegar no sugar added
- 1/2 cup water
- 1/2 tsp mineral salt
- 4 Tbsp SweetEs fusion sweet
Pickles
- 1 12 inch daikon radish
- 1 Tbsp salt
Instructions
- Make brine by combining ingredients and mixing well. Set aside
- Wash, peel, and cut radish into desired shape. I opted for sticks like French fries.
- Place radish in bowl with 1 Tbsp salt. Rub well, the let sit for 15 minutes.
- Drain and rinse radish after 15 minutes
- Place radish in pint sized mason jar, cover with brine, refrigerate for 24 hours. Store in fridge for up to one month.
