Black beans and “rice” with a Cuban flair! The small amount of beans in this dish is perfectly acceptable paired with healthy fats, so enjoy!!!
Ingredients
- 1/4 cup diced scallions
- 1/4 cup diced red onions
- 1/4 cup diced red bell peppers
- 1/4 cup diced cubanelle peppers can use green bell peppers
- 4 finely diced garlic cloves
- 2 Tbsp avocado oil
- 1 tsp mineral salt
- 1 tsp cumin
- 1 tsp oregano
- 1/4 tsp chipotle pepper
- 1/2 cup canned black beans- liquid included
- 1/4 cup chicken broth
- 2 cups diced cauliflower
Instructions
- Place all diced veggies and oil in saucepan over low heat. Cover and allow veggies to sweat for 20 minutes. This brings out the flavor
- Add all other ingredients, stir, cover and cook 10 more minutes.
- If using frozen cauliflower, you may need to drain your “rice” when done.
