A quick stovetop casserole for 2 suitable for breakfast or anytime!
I used Conecuh sausage which has incredible flavor, but if you can’t find that, just use any kielbasa type sausage that you like. If you can find a Cajun flavored one, that’s a big plus!
Ingredients
- 1 Tbsp refined coconut oil or avocado oil
- 4 oz conecuh sausage read note above
- 1/4 cup seasoning blend
- 1 cup riced cauliflower- I used frozen
- 1 tsp Cajun spice seasoning
- 1/4 tsp mineral salt
- 2 large eggs
- 1/4 cup cheddar cheese shredded
Instructions
- Heat oil in large skillet over medium high heat
- While oil is heating, slice sausage into diagonal 1/4” thick slices.
- Add sausage to hot oil and cook for approximately 2 minutes per side. Remove from oil and set aside.
- Add seasoning blend to skillet-being careful as it will splash and sputter. (I hold a lid facing away from me, on the edge of pan and pour ingredients behind it- closing it immediately)
- Add Cajun seasoning and salt to seasoning blend, stir until well combined.
- Add riced cauli and mix well Cook this mixture for 5 minutes, stirring frequently, then remove from pan and set aside.
- Add 2 large eggs to pan, scramble eggs, cook til set. Once set, add cauli mix and sausage back to pot, mix to combine, then sprinkle with cheese.
- Cover mixture with lid, turn heat off, and allow mixture to sit for 5 minutes.
- Serve immediately. Garnish with avocado if desired.
