SweetEs black-eyed peas

So since moving to the south, I’ve been hearing about the New Years Day tradition of eating black eyed peas, paired with cabbage and hog jowls. This is my 3rd New Years here and I decided to do the “when in Rome” thing. The saying goes, cabbage for wealth, black eyes peas for luck and hog jowls for health. Well I did my own interpretation of that by making black eyes peas with brown rice, which I will then pair with cabbage on the side and lean ham as my protein. This recipe is really simple, and extremely tasty, so go make it and enjoy!

Ingredients

  • 6 cups of water
  • 1 lb bag dried black eyed peas
  • 1 Tbsp apple cider vinegar
  • 48 oz chicken broth
  • 1 Tbsp mineral salt
  • 1 tsp dry thyme
  • 1 tsp dry basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp cayenne pepper optional
  • 1/4 tsp black pepper
  • 1 cup seasoning blend (or 1/2 C each chopped bell peppers & onions)
  • 2 cups parboiled brown rice I used Minute rice

Instructions

  • Pour peas into bowl and rinse and clean well.
  • Quick soak peas by adding 6 cups water and apple cider vinegar to a large pot, then adding rinsed peas.
  • Cover and bring to a roiling boil, cooking for 5 minutes.
  • Remove from heat, and let peas sit covered for an hour
  • Drain and rinse “soaked” beans, discarding soak water, then return peas to pot.
  • Add all other ingredients except seasoning blend and rice.
  • Cook covered, for 60 minutes over low heat.
  • Add the rice and seasoning blend, stir to mix well, cover and cook an additional 30 minutes
