Buttery, flavorful,slightly spicy, yummy chicken. This recipe is a departure from western cuisine, with as its Indian flavors really kick things up a notch. Garam Masala is a seasoning that can be found in the international isle of your store or if you’re adventurous, you can make your own.
Ingredients
Marinade
- 1/2 cup lemon juice I use fresh
- 1/2 cup 0% Greek yogurt
- 2 tsp mineral salt
- 1 Tbsp Garam Masala
- 1 tsp turmeric
- 2 tsp cumin
- 2 lbs skinless boneless chicken cut into 1” pieces
Butter Sauce
- 1/4 cup butter
- 2 Tbsp Nutiva buttery coconut oil
- 1/2 medium onion- diced
- 2 tsp cumin seeds optional
- 1 tsp ginger powder or 1Tbsp of freshly grated
- 1 tsp garlic powder or 4 cloves smashed and chopped
- 1/4 tsp cinnamon
- 14 oz can diced tomatoes
- 1/2 cup chicken broth
- 1/2 cup canned coconut milk
Instructions
- Add all marinade ingredients to bowl, mix to combine, then add chicken pieces.
- Let marinate for one hour up to 24 hours
- Place butter and coconut oil in large frying pan over medium high heat.
- Add onions, and cumin seed sauté for 5 minutes
- Add chicken pieces, along with marinade, sauté another 5 minutes.
- Add all other sauce ingredients- mix well, cover and continue cooking 15-20 minutes.
- Serve over cauliflower rice if desired.
