Tired of boring scrambled eggs? I know I was; not that I ever do boring, but I definitely wanted something different. I’m always trying to find ways to get veggies in, so I thought, why not add some to my eggs! And while I’m at it, let’s ramp up the flavor.This was perfect over a bed of chopped romaine and drizzled with my ACV Syrup!

Ingredients

  • 1 Tbsp Nutiva buttery coconut oil
  • 1 medium tomato chopped
  • 1/4 cup diced red peppers
  • 2 Tbsp diced cubanelle peppers optional
  • 2 Tbsp diced cilantro
  • 1 Tbsp diced onions
  • 1/4 tsp creole seasoning
  • 3/4 cup frozen diced cauliflower
  • 4 large large eggs
  • 1/4 tsp mineral salt
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1 Tbsp nutritional yeast
  • 1 recipe SweetEs ACV Syrup

Instructions

  • Heat oil in large skillet over high heat for one minute
  • Add all chopped veggies, except cauliflower, sauté for 3 minutes
  • Add cauliflower and creole seasoning, saute an additional2-3 minutes
  • While veggies are cooking, crack eggs in medium bowl, add dry seasonings, and beat with fork till fluffy.
  • Make well I center of veggie mix in skillet, pour in beaten eggs.
  • Gently fold into veggies, flipping until just set; about 2 minutes. Remove from skillet immediately to stop cooking process.
