Cauli Egg Scramble (F)
Tired of boring scrambled eggs? I know I was; not that I ever do boring, but I definitely wanted something different. I’m always trying to find ways to get veggies in, so I thought, why not add some to my eggs! And while I’m at it, let’s ramp up the flavor.This was perfect over a bed of chopped romaine and drizzled with my ACV Syrup!

Ingredients
- 1 Tbsp Nutiva buttery coconut oil
- 1 medium tomato chopped
- 1/4 cup diced red peppers
- 2 Tbsp diced cubanelle peppers optional
- 2 Tbsp diced cilantro
- 1 Tbsp diced onions
- 1/4 tsp creole seasoning
- 3/4 cup frozen diced cauliflower
- 4 large large eggs
- 1/4 tsp mineral salt
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1 Tbsp nutritional yeast
- 1 recipe SweetEs ACV Syrup
Instructions
- Heat oil in large skillet over high heat for one minute
- Add all chopped veggies, except cauliflower, sauté for 3 minutes
- Add cauliflower and creole seasoning, saute an additional2-3 minutes
- While veggies are cooking, crack eggs in medium bowl, add dry seasonings, and beat with fork till fluffy.
- Make well I center of veggie mix in skillet, pour in beaten eggs.
- Gently fold into veggies, flipping until just set; about 2 minutes. Remove from skillet immediately to stop cooking process.
