A versatile recipe that can serve multiple purposes; one cheesy version for healthy fats, the other low fat but still flavorful. I made the basic recipe, then divided my mixture in half. I then proceeded to “doctor” the other half ramping up the flavor with cheesy goodness. Your recipe below is a two part recipe, where some are fried and some are baked. Be sure to read through the recipe completely before starting. Serve these with my Infamous Jalapeño Dressing as a dipping sauce for a yummy treat any time!

Chicken Fritters (F) or (LF)

Ingredients

  • 1 Tbsp oat fiber
  • 1/2 Tbsp adobo seasoning
  • 1/2 tsp chili powder
  • 1/4 tsp black pepper
  • 1 medium Cubanelle pepper - rough chopped can use bell pepper instead
  • 1 stalk scallions rough chopped
  • 1 stalk celery rough chopped
  • 1/4 cup cilantro - rough chopped
  • 1/4 cup flat leaf parsley - rough chopped
  • 1 clove garlic- smashed
  • 1 large egg
  • 1/4 cup mozzarella cheese
  • 6 wedges Laughing cow cheese- garlic flavor optional
  • Oil for frying

Instructions

  • Add chicken, oat fiber, adobo, chili powder and black pepper to a bowl. Mix until well combined and chicken is fully coated.
  • Take half of the seasoned chicken and half of the chopped veggies and add to food processor. Process until fully combined and all items are well mixed.
  • Scrape into a bowl and set aside. This is your LF option
  • Preheat oven to 350
  • Take second half of chicken and veggies, plus egg and cheese and add to food processor - process as before until fully combined. This is your (F) option.
  • Add oil to skillet, then heat on stove over med high heat.
  • Using ice scream scoop, place mounds a few inches apart in hot skillet, then press flat with spatula.
  • Fry each side approximately 3 minutes, til golden brown and fully cooked through. Timing is dependent on how flat you make them. The thicker they are the longer they’ll take to cook. I flatten mine to about 1/4”.
  • While patties are frying, spray a 12 cup muffin tin with cooking spray. Skip this step if it’s silicone or non-stick.
  • Using cookie scoop, place mounds in wells of muffin tins, spreading equally over the wells. Place 1/2 wedge of laughing cow cheese on top of each mound and press down into “muffin”.
  • Bake at 350 for 15 minutes then remove from oven.
