Shredded chicken in a slightly spicy green sauce, that kicks the flavor up a few notches..make the creamy dressy that goes with this, and you have an amazing LF dish that seems much too rich to be Low Fuel.
Ingredients
- 2 large chicken breasts about 1 pound
- 1/4 tsp adobo seasoning
- 1/4 tsp mineral salt
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1/4 tsp chipotle pepper
- 1/2 cup La Victoria thick n chunky salsa this is a bit spicy
- Low carb tortillas if desired
- Sour Cream Dressing
Instructions
- Spray large skillet with cooking spray, place over medium low heat
- Cut chicken into 1”chunks, add to heated skillet, then add all seasonings, except salsa and mix well.
- Turn heat up to high for about 4-5 minutes to lightly brown pieces, on both sides, then reduce heat and add salsa.
- Allow meat to cook stirring frequently, until fully cooked, about 10 minutes
- While meat is cooking prepare your condiments.
- Chop lettuce or cabbage, diced tomatoes, and if desired you may add cheese and avocado to make this an F.
- To serve, crisp a low carb tortilla in pan sprayed in cooking spray. Load with chicken, chopped veggies and top with my Sour Cream Dressing.
- Alternately, serve on a bed of shredded cabbage instead of tortilla
