This recipe seems complicated as it has some moving parts but it’s really simple and done in 25 minutes if you multitask. It has 3 toppings and should go on in the order written.
Ingredients
Rolls
- 2 cups mozzarella cheese
- 2 oz cream cheese
- 1 cup almond flour
- 3/4 cup SweetEs fusion sweet
- 2 large eggs
- 1 Tbsp cinnamon
- 2 tsp vanilla extract
- 1/2 tsp almond extract
- 1/8 tsp mineral salt
- 2 tsp aluminum free baking powder
Glaze
- 2 oz cream cheese
- 2 Tbsp butter
- 1 tsp cinnamon
- 1/2 tsp vanilla
- 1/4 c SweetEs fusion sweet
- 1/3 c heavy cream
Cinnamon Sugar
- 2 Tbsp granulated xyllitol
- 1/4 tsp stevia
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
Cinnamon Butter Sauce
- 2 Tbsp butter
- 1/4 tsp cinnamon
- 2 Tbsp SweetEs fusion sweet
- 1/4 tsp vanilla
Instructions
Rolls:
- Place cheeses in microwave safe dish. Nuke approximately 60-90 seconds to melt.
- Place melted cheeses, and all other ingredients in food processor, process until combined. Batter will be very sticky.
- Scoop evenly into 2 muffin pans. I used a 12 cup and a 6 cup- made 18 muffins. Bake at 350 for 20 minutes.
- While muffins are baking, make cream cheese glaze.
Glaze
- Place all ingredients except cream cheese in saucepan over medium heat- whisk to combine.
- Add cream cheese, turn heat to low and allow it to soften about 5 minutes.
- Whisk to combine. Mixture will be chunky. Pour mixture into heat proof blender, blend until smooth, then return to saucepan and let simmer for 5 minutes. Remove from heat.
- When muffins are done, allow to cool for 5 minutes, then cut each muffin into 4 pieces.
- Place 1/2 of bites in single layer in serving dish.
- Drizzle with 1/2 of sauce. Repeat process with rest of bites and sauce.
Cinnamon Sugar
- Mix all ingredients in small bowl. Sprinkle over top of dish.
Cinnamon Butter Sauce
- Place all ingredients in saucepan over medium heat- heat until just melted.
- Whisk to combine.
- Pour over top of dish as final topping.

Looks delicious but how many calories are they?
We don’t count calories. Just be mindful that they are a dessert and treat them as such.
Made these for my family and they were a huge hit even with my BIL who refuses to eat most on plan treats! They really aren’t as complicated to make as they seem. I whipped them up fairly quickly and they are so tasty!

What would you suggest in the place if the almond flour? Could I use flaxmeal or maybe flax mixed with sunflower seed flour? Any reason why that would not be in plan?
I have no idea how sunflower seed flour behaves, so I can’t advise you there. I would suggest splitting the difference of the amount of almond flour with both coconut flour and flax meal.
