Yummy chewy fruit cookies that aren’t a crossover.
Ingredients
- 1/4 cup fresh cranberries
- 1/4 cup fresh raspberries
- 1 Tbsp chia seeds
- 1/2 tsp rum extract optional
- 3/4 cup SweetEs fusion sweet
- 1 cup SweetEs All Purpose baking blend
- 1/2 cup almond flour
- 2 tsp aluminum free baking powder
- 1/4 tsp mineral salt
- 1 egg
Instructions
- Place berries, chia, sweetener and rum extract in saucepan over medium heat
- Cook for 10 minutes, mashing roughly with potato masher
- Remove from heat and set aside to cool for 10 minutes
- Place all dry ingredients in mixing bowl- whisk to combine
- Add berry mixture to dry stuff, mix well.
- Add egg - mix well
- Using cookie scoop, place mounds 2” apart on parchment lined cookie sheet
- Wet fingers and press mounds flat
- Bake at 350 for 15-18 minutes
