These creamy eggs are wonderful and delish and a nice change of pace from the norm!
Ingredients
- 1 tsp buttery coconut oil
- 1/4 cup 2% cottage cheese
- 1 egg
- 1 diced mini bell pepper
- 2 Tbsp chopped scallions
- 1 Pinch mineral salt
- 1 Pinch adobo seasoning
Instructions
- Place oil in skillet over medium heat. Spread around to cover bottom of pan
- Add cottage cheese, scallions and peppers mix to combine.
- Allow to cheese & veggie mixture to heat for about two minutes, then add egg and seasonings
- Scramble and cook for 2-3 more minutes.
