Ingredients

  • 1/4 cup diced scallions
  • 1/4 cup diced red onions
  • 1/4 cup diced red bell peppers
  • 1/4 cup diced cubanelle peppers can use green bell peppers
  • 4 finely diced garlic cloves
  • 2 Tbsp avocado oil
  • 1 tsp mineral salt
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 tsp chipotle pepper
  • 1/2 cup canned black beans- liquid included
  • 1/4 cup chicken broth
  • 2 cups diced cauliflower

Instructions

  • Place all diced veggies and oil in saucepan over low heat. Cover and allow veggies to sweat for 20 minutes. This brings out the flavor
  • Add all other ingredients, stir, cover and cook 10 more minutes.
  • If using frozen cauliflower, you may need to drain your “rice” when done.
