Yummy flavorful chicken in its own amazingly flavored sauce. Curry can be an overwhelming flavor, but trust me, in this recipe, it’s perfectly balanced and offset by the acidity of the tomato paste and lemon juice.
Ingredients
- 4 lbs chicken wingettes
- 2 Tbsp mineral salt
- 4 Tbsp curry powder (don’t be afraid of it)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried basil
- 1/2 tsp black pepper
- 2 Tbsp coconut oil
- 1 small onion - rough chopped
- 3 cloves garlic - rough chopped
- 1/2 bunch scallions - diced
- 1/2 6 oz can tomato paste
- 1/4 cup lemon juice (I use fresh, bottled is ok)
- 4 cups water
Instructions
- Rinse and season chicken with all dry seasonings.
- Heat large skillet or pot, over med high heat, then add oil.
- Add chicken and brown, about 10 minutes, turning at the halfway point.
- Add all other ingredients, stir, well to dissolve tomato paste then cover.
- Turn heat to low, and let simmer 35 minutes, til done.
- Serve over brown rice for a yummy crossover, or over cauliflower rice, to stay in healthy fats mode.
