Need a meal that cooks up in no time, with no special ingredients? This dish comes together in just under 15 minutes and costs less than $10 for a family of 4. With three basic ingredients and a few spices, you’ll have dinner done in a flash! These are 4 very generous servings…you can even stretch it to 6 and pair other things with it like a big green salad, or some zucchini sautéed in chicken broth.
Ingredients
- 1 lb regular fat ground beef
- 1 12 oz package of frozen cauliflower rice/pearls
- 1 Tbsp apple cider vinegar
- 1 Tbsp lemon juice
- 1 Tbsp cumin
- 1/2 tsp mineral salt
- 1/2 tsp adobo seasoning
- 1/4 tsp creole seasoning
- 1/4 bunch chopped cilantro
- 1 12 oz jar La Victoria thick n chunky green salsa
Instructions
- Brown ground beef over medium high heat until all fat is rendered (5 minutes)
- Pour into colander and rinse under hot running water
- Return empty skillet to stove, add cauliflower, vinegar, lemon, and all other ingredients except salsa and meat.
- Stir and allow to cook for 2-3 minutes- then add in ground beef and jar of salsa mixing to combine.
- Cook an additional 2-3 minutes. Remove from heat.
Notes
Enjoy as is as an LF meal, or pair with half an avocado for a succulent F meal. You can even top with some cheese, along with the avocado!
