These Lemony cheesecake cupcakes are super yummy and easy to make.
Ingredients
- 8 oz cream cheese
- 1/3 cup Nutiva buttery coconut oil
- 1 cup SweetEs fusion sweet
- 1/8 tsp mineral salt
- 1 Tbsp vanilla extract
- 1 tsp lemon extract
- 1/2 tsp almond extract
- Zest of medium lemon
- 4 large eggs
- 1 Tbsp aluminum free baking powder
- 1/2 cup almond flour
- 1 cup SweetEs All Purpose baking blend
- 1 recipe SweetEs Butter Cream Frosting doubled if you like a lot of frosting
- 10 large strawberries diced with 3 Tbsp of SweetEs Fusion Sweet added
Instructions
- Place first 4 ingredients in mixing bowl. Using hand mixer, mix on medium, til creamy (about a minute)
- Add next 4 ingredients, mix until just combined
- Add eggs and baking powder, mix until combined
- Add flour, mix on low until fully combined
- Scoop mixture into paper lined muffin tins
- Bake at 350 for 25 minutes.
- While cupcakes are baking, dice berries, add sweetener and set aside
- Remove cupcakes from oven, allow to cool.
- Once fully cooled, frost with butter cream frosting, then top with diced sweetened berries.
