Ingredients
The Noodles
- 1 medium head of cauliflower chopped into noodle size pieces
- 1/2 tsp mineral salt
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese - divided
Cheese Sauce
- 1/4 cup heavy cream
- 1/4 cup cottage cheese
- 2 Tbsp butter
- 3 Tbsp Parmesan cheese green can
- 1/2 tsp onion powder
- 1/4 tsp mineral salt
- 1/4 tsp garlic powder
- 1/2 tsp adobo seasoning
- 3 Tbsp mustard
- 1/2 cup shredded Colby or sharp cheddar cheese
Instructions
- Place cauliflower and all ingredients for the noodles...except cheese in bowl.
- Mix well to combine, then transfer to oven proof dish. (I use 11x7) Set aside.
- Place all ingredients for cheese sauce in saucepan over medium heat- using only 1/2 cup of cheddar - whisk until combined and fully melted. About 6-8 minutes
- Pour sauce over cauliflower, top with other 1/2 cup cheddar cheese- bake at 350 for 25-30 minutes
- I use my cauliflower raw as I want it to still have a bit of a bite to it. If you prefer, you can steam it or roast it first.
