This blend was created for one of my clients with a nut allergy. Because her success is important to me as a coach, I wanted to make sure she could enjoy most THM foods that call for baking blend, without feeling deprived in any way.

Ingredients
- 1 cup oat fiber
- 1 cup coconut flour
- 3/4 cup hydrolyzed collagen peptides (can replace 1/4 c with whey protein isolate)
- 1/4 cup flax meal (if you have seeds just grind them)
- 1/3 cup ground psyllium husk powder (if you have whole flakes just grind them)
- 1/2 Tbsp gluccomannan or xantham gum
Instructions
- Whir in blender or food processor to combine. Store in tightly sealed container
- This blend is denser than my All purpose blend, due to the necessary changes. Because coconut flour expands quite a bit, and sucks up a lot of moisture, you may need to use slightly less, (3/4 cup instead of a cup in a recipe). You will also want to let any batter "rest" for 5-10 minutes prior to baking. This allows the flours to rehydrate.

This is a Fuel Pull blend--Based on 1/4 C servings
Each serving has 1 gram of fat and 1 net carb (technically you can double it and still be in FP range).
