I’m perfectly ok eating naked chicken with no breading, but my hubby, who is a fan of fried chicken made the conventional way, was looking for a healthier version…hence this was born. Fair warning, this recipe has a lot of seasonings, as I love flavorful food!
Ingredients
- 4-5 lbs chicken for frying I used legs and wings
- 2 tsp mineral salt
- 1 tsp adobo seasoning
- 1 tsp Cajun seasoning
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1 tsp thyme
- 1 tsp ground sage
- 1 tsp SweetEs Fusion Sweet
- 2 tsp smoked paprika
- 1 3 oz bag of plain pork rinds
- 2 eggs
Instructions
- Preheat oven to 400
- Combine all spices in small bowl- mix well- reserve 1 Tbsp
- Rub all chicken pieces well with seasoning mixture. Let sit for 30 minutes to absorb flavors
- Beat eggs in cup til frothy, pour into shallow bowl
- Pour pork rinds into gallon size baggie, crush by gently beating with coffee cup
- Add remaining Tbsp of seasonings to crush pork rinds- shake bag to mix.
- Line large cookies sheet with foil, and liberally grease with coconut oil
- Coat each pice of chicken in egg, then dredge in pork rind crumbs
- Place in single layer on cookie sheet, bake for 50 minutes at 400.
- Increase oven to 450, bake an additional 10-15 minutes.

Made this using chicken breasts cut into strips. Mom ate more than I have seen her eat in days, hubs loved it. They are delicious and so easy. I modified by not cooking as long, because they were boneless/skinless chicken breast pieces. Another for the rotation…
