And more green stuff! Yummy-good for you- green stuff packed with superfoods like baobab and moringa. Don’t let the color fool you. Delish!
Ingredients
- 10 oz unsweetened nut milk
- 1 Tbsp Baobab powder
- 3 Tbsp SweetEs fusion sweet
- 1 Pinch of mineral salt
- 1 tsp Moringa powder
- 1/2 tsp MCT oil
- 1/2 tsp lemon extract
- 1/2 cup ground rolled oats (Timesaver: pre-grind a bunch of oats - store in sealed jar)
- 1/2 of a medium zucchini (can use 1/2 cup fresh frozen spinach)
- 1/2 cup egg whites
Instructions
- Place first 6 ingredients in saucepan over medium heat.
- Whisk until fully combined.
- Add oats and continue whisking to remove lumps. Don’t worry if it’s not fully smooth
- Pour hot mixture into blender (I used my Dash-make sure yours can handle heat), add zucchini and blend til smooth.
- With blender still running, remove inner lid and pour in egg whites.
- Blend for 15-20 seconds.
Notes
Alternate version if blender is not heat safe, place ALL ingredients in blender first- blend until smooth. Pour mixture into saucepan and cook over medium heat for 3-4 minutes. Whisk vigorously to keep whites from scrambling.

Oh my word! So so so so so so good! I didn’t have lemon extract, so I used vanilla extract instead.
I upped the Baobab powder to 2 T.

I didn’t have the moringa, but it was still delicious. With the lemon extract it tasted like a warm lemon pudding. Why did I ever doubt this recipe??

So yummy! I modified mine just a bit. I only used 8 oz unsweetened nut milk and added the juice of a lemon. Oh, and didn’t use the MCT in the oats because I used it in my coffee.
