A thin crust for pizza that tastes almost exactly like the conventional bad-for-you ones. Try it and tell me what you think! Makes 2 small or 1 large crust.
Ingredients
- 1/2 cup unsweetened almond milk
- 1 tsp quick rise yeast
- 1/2 tsp raw honey
- 1 tsp apple cider vinegar
- 1/4 cup oat fiber
- 1/4 cup unflavored whey protein isolate
- 1/4 cup almond flour
- 1/2 tsp mineral salt
- 1/2 tsp SweetEs fusion sweet
- 1/4 tsp xanthan gum
- 1/2 Tbsp nutritional yeast
- 1 Tbsp whole psyllium husk
Instructions
- Heat milk in microwave for 30 seconds. You want it barely warm
- Add yeast, honey and apple cider vinegar to warm milk, stir and set aside.
- In small bowl measure out all dry ingredients- whisk to combine
- Add wet mixture to dry ingredients- mix with spoon til well combined, then cover with dish towel and set aside for 10 minutes.
- After 10 minutes, place half of mixture onto large piece of parchment paper, wet hands thoroughly and form dough into circle. Flatten by patting and rubbing in continuous gentle circles. HANDS MUST BE WET.
- Repeat with second half of dough
- Make sure your crust is uniform or it will cook unevenly.
- Place on cookie sheet, bake at 350 for 10 minutes
- Turn oven off, leave crust in oven 5 more minutes.

Would these freeze well?
I’ve only made it and used it immediately after, but you can give freezing it a shot. Wrap it well in plastic wrap, then seal in a baggie where you’ve squeezed all of the air out. If you have a vacuum sealer, even better.
