Ingredients

  • 1 c grated zucchini equivalent 1 medium
  • 2 c grated sweet potato equivalent 1 medium
  • 1/2 c sprouted spelt flour*
  • 1/2 c sprouted rye flour*
  • 1/2 Tbsp aluminum free baking powder
  • 1/2 tsp mineral salt
  • 3 Tbsp SweetEs fusion sweet
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 Tbsp raw honey
  • 1/2 tsp of almond extract
  • 1 tsp vanilla extract
  • 1/2 tsp liquid cinnamon extract or 2 teaspoons powder Watkins
  • 1/2 c unsweetened applesauce
  • 1/2 c egg whites

Instructions

  • Put squash and sweet potato in food processor..process until the pieces looked grated (or grate by hand)
  • In separate bowl, add all dry ingredients whisk well to combine
  • Add wet ingredients to bowl, mix well.
  • Add sweet potato squash mixture to bowl, mix until incorporated.
  • *can use 1 cup of any sprouted flour - spelt, rye, or wheat..in place of two 1/2 cups
  • Pour mixture evenly into well of sprayed muffin tin.
  • Bake for 35-40 minutes.
