There are not enough adjectives in my vocabulary to describe this cake; scrumptious, divine, brilliant are just a few. Tell me what you think!
I made a quick strawberry syrup, made from the left-over juice from macerating strawberries in sweetener until it yields some juice, which I then poured over the frosting.
Ingredients
- 8 oz cream cheese room temperature
- 1/2 cup low fat sour cream I use Daisy
- 1/4 cup Nutiva buttery coconut oil
- 1 1/2 cups SweetEs Fusion Sweet
- 4 whole eggs plus 2 yolks
- 2 Tbsp vanilla extract
- 2 tsp butter extract
- 1/2 tsp almond extract
- 1 Tbsp aluminum free baking powder
- 1/2 tsp baking soda
- 1/4 tsp mineral salt
- 2 1/4 cups almond flour
- 6 Tbsp coconut flour
- 1 tsp xanthan gum
- 1/4 cup whey protein powder
- 1/2 cup unsweetened almond milk
- 1 recipe SweetEs Butter Cream Frosting
Instructions
- Add cream cheese, sour cream, buttery coconut oil, and sweetener to mixing bowl. Mix on low 2 minutes til creamy
- Add eggs, mix til incorporated. With mixer running, add balance of ingredients, one at a time, until fully incorporated-about 2 minutes
- Line 2 9” round baking pans with parchment paper.
- Add half of batter to each pan. Weigh them to be sure you have even amounts in each
- Bake at 350 25-28 minutes
- Frost with SweetEs Buttercream Frosting.

Does this cake need to sit in ther fridge over night before eating?
Ordinarily I like to give my batters time to marry, and the flours a chance to rehydrate, but there’s so much moisture in this from the ingredients, there’s no need to wait. Just whip it up and bake it!
Delicious! I made this the day you published it. I had the last piece for a quick Sunday breakfast before church today! Thank you for you delicious cake recipe!! I served this for dinner one night with a chokra shake when the grandkids came over (4 & 2) Coolest Grandma ever..cake and shake dinner night..LOL
