Place oxtails in large bowl, then add the next 7 seasoning ingredients.
Toss well to fully coat all pieces
If your pressure cooker has a searing option, add avocado oil to pan, then brown oxtails on all sides. Do not pour in seasoning liquids. If your pressure cooker doesn’t sear, brown your oxtail stovetop first, being sure to brown all sides
While meat is browning, rough chop your fresh veggies
After browning is complete, add all chopped veggies to pot, along with seasoning juices left in bowl.
Add in meat, broth, and tomato sauce.
Cook on high under pressure for 50 minutes - or stove top on low for about two hours.
Skim and discard the fat (close to 2 cups of it!) then enjoy with your favorite side!
